The grapes are harvested by hand, transported in crates and immediately pressed whole, without refrigeration.
This must is left to settle for 24 hours and transferred to the stainless steel tank for fermentation, which begins spontaneously after 4-5 days, at a controlled temperature of 17°.
It is bottled at 1015 sugar density, left to settle 13 months with the mothers and disgorged in October of the following year.
