In the winery, we embrace the biodynamic philosophy and calendar as a guide for all our work. Every task, from racking to bottling, is done by carefully choosing the ideal times according to the lunar phases. We lean towards the descending moon to protect our wines, while we opt for the flower day for the Macabeo varieties, thus highlighting their aromas. For other varieties, fruit day is our favorite, as it enhances freshness and varietal character.
We make exclusively handcrafted wines, a true expression of nature, free of any additives. According to the European definition, a natural wine is the result only of the alcoholic fermentation of fresh grapes or must. This means that in our creation process, there is no room for additional substances such as sulfites, yeasts or artificial enzymes.
The result is a pure, vibrant and lively wine that captures the very essence of the grape and the terroir of our vineyards. Each drop tells the story of a balanced and respectful growing cycle, free of herbicides or any other synthetic chemicals. Harvesting is done by hand, with meticulous attention that guarantees exceptional quality.
