Elaboration: Produced since 2022.

The grapes are harvested by hand, transported in boxes and immediately pressed whole, without refrigeration. This must is left to settle for 24 hours and transferred to the stainless steel tank for fermentation, which begins spontaneously after 4-5 days at a controlled temperature of 17°. It is bottled at 1,015 sugar density, left to settle for 13 months with the mothers and disgorged from October of the following year.
